A very old model of knife what was sold in the Rouen region. It used to be called "cow's tail" and were used by the local peasants. We decide to make it as it was, for connoisseur , in all carbon steel (not stainless)

Size & Weight :11 cm when folded, 19.5 cm open, approx 70 g.
Handle : pre-ban real ivory
Blade, spring and plates : traditional carbon steel (not stainless) and brass
Assembling :traditional hand made nickel silver rivets.
Included : simple leather pouch
